Ingredients

5 gLemon Zest
10 mlLemon Juice
200 gCream Cheese
100 gPastry Cream Main Recipe (Recipe 2362)

How to make it


PREPARATION
01. Place the Zeelandia Cake Silvestre, eggs, and Volumex in the mixer. Use a whisk attachment.
02. Mix on low speed (speed 1) for approximately 1 minute.
03. Beat on high speed (speed 3) for approximately 3 minutes.
04. Using a spatula, spread onto a greased and parchment-lined baking sheet (60x40 cm).
05. Bake at 210°C for approximately 5 minutes in a deck oven.
06. Cool. Set aside.

FILLING
01. In a bowl, mix the cream cheese, lemon juice, and zest, Chocolatier Chocoblanc, and pastry cream with a whisk until smooth. Set aside.
02. Using a spatula, spread the filling over the reserved dough.
03. Roll into a Swiss roll shape, trim the ends, and cut into 5 cm lengths.

FINISHING
01. Melt the white chocolate and dip the bottom of each Swiss roll (approximately 1 cm) for coating.
02. Cool.

Tips


- Alternative baking:
* Turbo Oven: 190°C for approximately 4 minutes.
The mini Swiss rolls can be decorated with rosettes of Chocolatier Chocoblanc, smooth or fluted on top, and can also be adorned with fruits, chocolate swirls, or jelly candies, as desired.
