Process
01. Place the Chocolatier ChocoBlanc, lemon juice, and lemon zest (optional) in a container and mix until homogeneous.
02. Set aside.
PREPARATION
01. Place the Zeelandia Prime Cake, eggs, milk, and oil in the mixer.
02. Mix on low speed (speed 1) for approximately 1 minute or until homogeneous. Use a paddle attachment.
03. Beat at medium speed (speed 2) for approximately 5 minutes.
04. Line the muffin pans with size 0 paper liners.
05. Using a piping bag with a smooth tip, apply approximately 50 g of batter to each mold.
06. Bake at 190°C for approximately 35 minutes in a deck oven.
FINISHING
01. Place the Chocolatier ChocoBlanc in the mixer and beat at high speed (speed 3) for approximately 3 minutes or until a cream is obtained. Use a whisk attachment.
02. Refrigerate until firm. Set aside.
03. Using a smooth tip, poke the center of each Cupcake.
04. With the help of a piping bag with a smooth tip, fill the center of each Cupcake with the reserved filling.
05. Using a piping bag with a star tip, apply the reserved frosting over the surface of each Cupcake.
06. Decorate with sprinkles to taste.

* Turbo Oven: 150°C for approximately 25 minutes.
