Grandma's Bread with Brioche

Process
01. Place the Zeelandia Brioche, Energia Vitalle Vitaminado and margarine in the mixer and mix at low speed (speed 1) for approximately 1 minute.
02. Add the eggs and part of the cold water (250 ml) and mix at low speed (speed 1) for approximately 4 minutes.
03. Gradually add the fresh yeast and the remaining cold water (250 ml) and mix at medium speed (speed 2) until reaching the veil stage.
04. Divide the dough into portions of 210 g. Shape into balls.
05. Cover with plastic. Let rest for 15 minutes.
06. Shape into short loafs.
07. Place on previously greased baking trays.
08. Ferment in a fermentation chamber (32°C) for approximately 1:30 hours or until ready.
09. Using a blade, make a lengthwise cut from end to end. Within the same cut, make two more cuts at a 45º angle, one on each side of the main cut.
FINISHING
01. Mix the wheat flour, starch, sugar, and margarine until it forms a crumb mixture. Set aside.
02. Brush with beaten whole eggs and sprinkle the reserved crumb mixture over each loaf.
03. Bake at 190°C for approximately 15 minutes in a deck oven.
Tips
* Turbo Oven: 150°C for approximately 15 minutes.
- For the production of chocolate bread, it is possible to substitute the crumb mixture with chocolate chips (400 g).
