Christmas Bread

Ingredients


Part Preparo

1 KgWheat Flour
45 gFresh Yeast
500 mlCold Water

Part Acabamento

50 gPowdered Sugar

Part Decoração

150 gCrystallized Fruits
150 gChopped Glazed Cherries

How to make it


PREPARATION
01. Place Pamix Plus and flour in the mixer and mix at low speed (speed 1) for approximately 3 minutes.
02. Add part of the cold water (400 ml) and mix at low speed (speed 1) for approximately 5 minutes or until a dough forms.
03. Gradually add the fresh yeast and the remaining cold water (100 ml) while mixing at low speed (speed 1) for approximately another 8 minutes or until reaching the veil stage.
04. Divide into pieces of 190 g. Shape into balls.
05. Cover with plastic wrap and let rest for 15 minutes.
06. Roll each piece into a rectangular shape (10 x 15 cm).
07. With the help of a spatula, spread Zeelandia Guava Filling (500 g) over the entire dough and shape it into a loaf.
08. Place in pre-greased loaf pans (19 x 8 x 5 cm).
09. Let ferment in a fermentation chamber (32°C) for approximately 1 hour or until the desired point.
10. Brush the surface with beaten whole eggs.


01. In a bowl, mix crystallized fruits and chopped cherries.
02. Decorate the breads.
03. Bake in a deck oven at 180°C for approximately 40 minutes.
04. Remove from the mold.
05. Cool.

FINISHING
01. With the help of a sieve, dust powdered sugar over the pieces.

- Other baking options:
*Turbo oven: 150ºC for approximately 35 minutes.
