Pe de Moça Cake

Ingredients

400 mlLiquid Milk
400 gEggs
280 gPeanut Flour

Part Cobertura

300 gCaramel Syrup
20 gUnsalted Butter
150 gWhole Roasted Peanuts Shelled
150 gFresh Cream
50 gGlucose
150 gMilk Chocolate

How to make it


COVERING
01. Set aside the roasted peanuts.
02. Place the milk chocolate in a bowl and set aside.
03. In a saucepan, combine the heavy cream and unsalted butter and heat until boiling. Set aside.
04. In another saucepan, add the caramel syrup and glucose and heat until it starts to boil.
05. Add the reserved cream and butter mixture and stir.
06. Bring to a boil, then simmer on low heat for approximately 2 minutes once boiling starts.
07. Remove from heat, pour over the reserved chocolate, and mix until homogeneous.
08. Allow to cool.
PREPARATION
01. In a mixer, combine Zeelandia Spiced Cake, eggs, part of the peanut flour (100 g), and milk.
02. Mix on low speed (speed 1) for approximately 1 minute. Use a paddle attachment.
03. Mix on medium speed (speed 2) for approximately 3 minutes.
04. Spread the remaining peanut flour on the bottom and sides of each round pan with a central hole (19 x 8 cm) that has been greased.
05. Pour 600 g of batter into each pan.
06. Bake at 170°C for approximately 50 minutes in a deck oven.
07. Remove from the pan. Allow to cool.
08. Cover each cake with the reserved topping and sprinkle with whole roasted peanuts.

Tips


- Alternative baking:
* Turbo oven: 140°C for approximately 40 minutes.
