02. Gradually add cold water and mix at low speed (speed 1) for approximately 3 minutes.
03. Add the fresh yeast and mix at high speed (speed 2) for approximately 5 minutes or until the veil stage is reached.
04. Round the dough.
05. Cover with plastic. Let it rest for 10 minutes.
06. Divide into portions of 30 g. Shape.
07. Place on previously greased baking sheets.
08. Allow to ferment in a fermentation chamber (32°C) for approximately 2 hours or until ready.
09. Bake at 220°C for approximately 8 minutes in a stone oven on a French bread baking sheet.
Tips
- Alternative baking:
* Turbo Oven: 180°C for approximately 5 minutes.
- It is possible to freeze the raw dough for 30 days if 1% of Zea Frozen Mass is added based on the weight of the premix. It may be necessary to increase the yeast dosage and reduce the water dosage. The use of appropriate equipment such as a blast freezer and a fermentation chamber is recommended.
