calcium propionate preservative, stabilizers calcium stearoyl-2-lactylate and polysorbate 20 sorbitan, acidulants citric acid and (L-) lactic acid, and flour improvers ascorbic acid (L-) and alpha-amylase from Aspergillus oryzae var.

100% (used as the basis for the recipe calculation).
Preparation Method
Sponge: Mix 5 kg of Italian Bread and gradually add 1.9 L of cold water in the mixer on low speed for approx. 2 min. Add 100 g of fresh yeast and 800 ml of cold water gradually and mix on low speed for approx. 3 min. Round the dough. Cover with plastic. Let it ferment in a fermentation chamber at room temperature for approx. 1 hour or until the desired point. Place the sponge dough back into the mixer. Add 1 kg of Italian Bread and 400 ml of cold water and mix on low speed until the beginning of the veil stage. Be careful not to reach the full veil stage. Divide into 500 g portions. Round the dough. Cover with plastic. Let rest for 20 min. Round again into a ball shape or shape into a loaf. Ferment in a fermentation chamber at room temperature for approx. 1:30 h. Be careful not to reach the maximum growth point. Make the final shaping. Bake at 200ºC for approx. 30 min in a deck oven with steam. When the breads start to brown, open the oven to dry.
