Ingredients

How to make it


FILLING
01. Mix the oregano and grated ham in a bowl.
02. Set aside.

TIP
- The ham filling can be replaced with chicken, ground beef, cooked vegetables, or calabrese filling.
PREPARATION
01. Place Zeelandia Versamix, eggs, and part of the water (300 ml) in the mixer.
02. Mix on low speed (speed 1) until homogeneous.
03. Add the yeast and mix for another minute on low speed (speed 1), gradually adding the remaining water (70 ml) and beating on high speed (speed 2) until reaching the veil stage.
04. Add chopped green herbs.
05. Divide into 50 g portions.
06. Cover the dough with plastic and let it rest for 10 minutes.
07. Using a rolling pin, roll the dough into 12 cm diameter discs.
08. Fill with 50 g of the reserved filling.
09. Close the disc with your fingertips, shaping it into a risole.

BREADING
01. Moisten the pieces in beaten eggs and coat with breadcrumbs.
02. Place on smooth baking sheets previously dusted with breadcrumbs.
03. Ferment in a fermentation chamber (32°C) for approximately 1 hour or until ready.
04. Heat the oil to 180°C.
05. Fry one side for approximately 3 minutes, turn over, and fry the other side for approximately 3 minutes.
06. Place the pieces on a paper towel.

Tips


- The pieces can be shaped using a risole mold.
